The kanji for "alcoholic beverage" is well known. The reason why the radical is "酉(hiyomi-no-tori)" instead of "氵(sanzui)" is because "酉" is originally a kanji character that represents a jar for storing sake. There is simply one type of reading, both phonetic and kun-yomi, and one meaning. I suppose that is proof that it has been loved by many drunks for a long time.
